- 2 large eggs
- 1 teaspoon vanilla extract

- 1/4 cup coconut flour (or all-purpose flour for non-gluten-free)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (or chunks)
- Optional: 1/4 cup chopped walnuts or pecans
Instructions
- Prepare the Oven and Pan:
- Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
- Prepare the Sweet Potato:
- If you haven’t already, cook and mash the sweet potato until smooth. This can be done by roasting or steaming the sweet potato until tender and then mashing it with a fork or potato masher.
- Make the Brownie Batter:
- In a large bowl, combine the mashed sweet potato, almond butter, maple syrup, eggs, and vanilla extract. Stir until smooth and well combined.
- In another bowl, whisk together the cocoa powder, coconut flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
- Fold in the chocolate chips (and nuts, if using).
- Bake the Brownies:
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are fine). Keep an eye on it near the 25-minute mark, as ovens may vary.
- Cool and Serve:
- Let the brownies cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely. Slice into squares and enjoy!
