Instructions

  1. Prepare the Oven and Pan:
    • Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
  2. Prepare the Sweet Potato:
    • If you haven’t already, cook and mash the sweet potato until smooth. This can be done by roasting or steaming the sweet potato until tender and then mashing it with a fork or potato masher.
  3. Make the Brownie Batter:
    • In a large bowl, combine the mashed sweet potato, almond butter, maple syrup, eggs, and vanilla extract. Stir until smooth and well combined.
    • In another bowl, whisk together the cocoa powder, coconut flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet mixture, stirring until fully combined.
    • Fold in the chocolate chips (and nuts, if using).
  4. Bake the Brownies:
    • Pour the batter into the prepared baking dish and spread it evenly.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are fine). Keep an eye on it near the 25-minute mark, as ovens may vary.
