Optional Topping:

  • 1½ cups mini marshmallows

Instructions

  • Preheat the Oven: Preheat your oven to 325°F.
  • Make the Brown Sugar Topping: In a medium bowl, mix the brown sugar, flour, cinnamon, and softened butter using a fork or pastry cutter until crumbly. Stir in chopped pecans and set aside.
  • Prepare the Sweet Potato Filling: Scoop the flesh from the prebaked sweet potatoes into a large mixing bowl. Mash until smooth.
  • Stir in the granulated sugar, eggs, melted butter, evaporated milk, vanilla extract, and salt. Mix until smooth and well combined.
  • Assemble the Casserole: Spread the sweet potato mixture evenly into a greased 9×13-inch baking dish (or 11×8-inch for a thicker casserole).
  • Add the Topping: Sprinkle the prepared pecan topping evenly over the sweet potatoes.
  • Bake: Bake for 25–30 minutes, or until the topping is lightly browned and caramelized.
  • Add Marshmallows (Optional): If using marshmallows, sprinkle them over the top of the casserole and broil for about 2 minutes, or until golden brown and gooey. Watch closely to avoid burning.
