- Preheat your oven to 350°F (175°C) and line a muffin tin with silicone or paper liners.
2. Prepare the Sweet Potato:
- If you haven’t already, cook the sweet potato. You can microwave it by piercing it a few times and microwaving it for 5-6 minutes or until tender, or bake it in the oven at 400°F (200°C) for about 45 minutes until soft.
- Once cooked, remove the skin and mash the sweet potato in a bowl. Measure out 1 cup of mashed sweet potato for the recipe.
3. Mix the Ingredients:
- In a large bowl, combine the mashed sweet potato, whole wheat flour, rolled oats, applesauce, egg, baking powder, and cinnamon (if using).
- Stir in the coconut oil or olive oil for added moisture, if desired. Gradually add water if the batter is too thick—aim for a consistency similar to pancake batter.
4. Fill the Muffin Tin:
- Spoon the muffin batter into the muffin tin, filling each cup about 3/4 of the way full.
5. Bake:
- Bake the muffins in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool completely before serving them to your dog.
6. Serve:
- Serve these muffins as an occasional treat for your dog. Store any leftovers in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
