For the crust:
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- ½ teaspoon salt
- ¾ cup unsalted butter, cold and cubed
- 2–3 tablespoons ice water

For the filling:
- 2 cups cooked and mashed sweet potatoes (about 2 medium sweet potatoes)
- 1 cup granulated sugar
- ½ cup brown sugar
- 3 large eggs
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C).
- In a food processor, pulse the flour, sugar, and salt until combined. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
- Add 2 tablespoons of ice water and pulse again until the dough starts to come together. If needed, add the remaining tablespoon of ice water.
- Press the dough into the bottom of a greased 9×13-inch baking dish, making sure it’s evenly spread. Bake for 10-12 minutes, or until lightly golden. Remove from the oven and set aside.
- Prepare the filling: In a large mixing bowl, whisk together the mashed sweet potatoes, granulated sugar, brown sugar, eggs, heavy cream, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth and well combined.
- Pour the sweet potato mixture over the partially baked crust. Spread evenly.
- Bake for 40-45 minutes, or until the filling is set and a toothpick inserted comes out clean.
- Let the bars cool completely in the pan before slicing into squares.
- Serve with whipped cream or a sprinkle of cinnamon for an extra treat!
Notes
- For the best results, make sure to use cooked, mashed sweet potatoes that are smooth and free of lumps.
- You can make the crust ahead of time and refrigerate it until you’re ready to bake.
- To make this recipe dairy-free, you can substitute the butter with a plant-based butter and use coconut cream in place of heavy cream.
