Description

These Sweet Potato Pie Bars are the perfect combination of sweet, spiced, and creamy goodness!   • For the crust:

    • 1 ½ cups all-purpose flour
    • ¼ cup granulated sugar
    • ½ teaspoon salt
    • ¾ cup unsalted butter, cold and cubed
    • 23 tablespoons ice water

 

  • For the filling:

    • 2 cups cooked and mashed sweet potatoes (about 2 medium sweet potatoes)
    • 1 cup granulated sugar
    • ½ cup brown sugar
    • 3 large eggs
    • ½ cup heavy cream
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • ½ teaspoon ground nutmeg
    • ¼ teaspoon ground ginger
    • ¼ teaspoon salt

Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C).
  2. In a food processor, pulse the flour, sugar, and salt until combined. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
  3. Add 2 tablespoons of ice water and pulse again until the dough starts to come together. If needed, add the remaining tablespoon of ice water.
  4. Press the dough into the bottom of a greased 9×13-inch baking dish, making sure it’s evenly spread. Bake for 10-12 minutes, or until lightly golden. Remove from the oven and set aside.
  5. Prepare the filling: In a large mixing bowl, whisk together the mashed sweet potatoes, granulated sugar, brown sugar, eggs, heavy cream, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth and well combined.
  6. Pour the sweet potato mixture over the partially baked crust. Spread evenly.
  7. Bake for 40-45 minutes, or until the filling is set and a toothpick inserted comes out clean.
  8. Let the bars cool completely in the pan before slicing into squares.
  9. Serve with whipped cream or a sprinkle of cinnamon for an extra treat!

Notes

  • For the best results, make sure to use cooked, mashed sweet potatoes that are smooth and free of lumps.
  • You can make the crust ahead of time and refrigerate it until you’re ready to bake.

 

  • To make this recipe dairy-free, you can substitute the butter with a plant-based butter and use coconut cream in place of heavy cream.
