Description

  • 2 large sweet potatoes, sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 oz goat cheese, softened
  • ½ cup dried cranberries
  • 2 tablespoons honey (optional)
  • Fresh thyme leaves for garnish
  • Balsamic glaze for drizzling

Instructions

  • Prep and Roast the Sweet Potatoes:
    • Preheat your oven to 425°F (220°C).
    • Arrange the sweet potato rounds on a baking sheet and brush both sides with olive oil. Season with salt and pepper.
    • Roast in the preheated oven for 20-25 minutes, flipping halfway, until the sweet potatoes are golden and tender.
  • Add the Toppings:
    • Remove the sweet potatoes from the oven. While still warm, spread a small amount of goat cheese on each round. Top with a few dried cranberries.
  • Drizzle and Garnish:
    • Drizzle the rounds with honey (if using) and a light drizzle of balsamic glaze. Sprinkle with fresh thyme leaves.
