Description
Sweet Roasted Rhubarb is a simple yet delicious dessert or topping that highlights the tangy flavor of rhubarb while mellowing it with a touch of sweetness. Roasting the rhubarb intensifies its flavor and creates a soft, caramelized texture that pairs perfectly with yogurt, ice cream, or simply on its own.
Ingredients
Scale
- 4 cups rhubarb, chopped into 1-inch pieces
- 1/4 cup granulated sugar
- 1 tablespoon honey (optional for extra sweetness)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon (optional)
- 1 tablespoon fresh orange juice (optional, for added zest)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, toss the chopped rhubarb with sugar, honey (if using), vanilla extract, cinnamon, and orange juice until the rhubarb is evenly coated.
- Spread the rhubarb mixture evenly on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring once halfway through, until the rhubarb is soft and has released its juices. It should be tender and slightly caramelized.
- Remove from the oven and let cool slightly before serving. The roasted rhubarb can be served warm or at room temperature.
- Serve over yogurt, ice cream, or enjoy it as a simple dessert on its own.
Notes
- Feel free to adjust the sweetness to your preference by adding more sugar or honey if the rhubarb is particularly tart.
- For a unique twist, try adding a sprinkle of fresh mint or toasted nuts like almonds or walnuts after roasting.
- This dish can also be used as a topping for cakes, pancakes, or waffles for extra flavor.
