- 2 cups mini pretzels
- 1 cup salted peanuts
- 1 cup butter (2 sticks)
- 1 cup brown sugar, packed
- 1/2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp salt (optional, if you want more salty balance)
- 1/2 cup mini M&Ms or chocolate chips (optional, for extra sweetness)
Instructions
- Preheat the Oven:
- Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
- Mix the Dry Ingredients:
- In a large mixing bowl, combine the Chex cereal, pretzels, and salted peanuts. Set aside.
- Make the Toffee Coating:
- In a medium saucepan over medium heat, melt the butter. Once melted, add the brown sugar and stir continuously until the mixture comes to a simmer. Let it boil for 2 minutes without stirring.
- Add Vanilla and Baking Soda:
- Remove the saucepan from heat and stir in the vanilla extract, baking soda, and salt. Be careful, as the mixture will bubble up when you add the baking soda.
- Coat the Chex Mix:
- Pour the toffee sauce over the dry ingredients (Chex cereal, pretzels, and peanuts). Stir gently to coat everything evenly.
- Bake the Chex Mix:
- Spread the coated Chex mix in an even layer on the prepared baking sheet. Bake for 1 hour, stirring every 15 minutes to ensure the mix is evenly coated and to prevent burning.
- Cool and Add M&Ms (Optional):
- Once baked, remove from the oven and let it cool completely on the baking sheet. If using, stir in mini M&Ms or chocolate chips while the mix is still slightly warm.
- Serve and Store:
- Once cooled, break the Chex mix into pieces. Store in an airtight container for up to 1 week.
