This Sweet & Spicy Korean BBQ Meatloaf combines the best of both worlds—savory, juicy meatloaf with the bold flavors of Korean BBQ. The sweet and spicy glaze adds the perfect finishing touch to this delicious twist on a classic dish.

For the Meatloaf:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp ground ginger
  • 1/2 tsp ground black pepper
  • 1/4 tsp salt

For the Sweet & Spicy Korean BBQ Glaze:

  • 1/4 cup gochujang (Korean red chili paste)
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tsp brown sugar (optional, for extra sweetness)
  • 1 tbsp water (if needed, to thin out the glaze)

For Garnish (optional):

  • Chopped green onions
  • Sesame seeds

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Prepare the Meatloaf Mixture:
    In a large mixing bowl, combine the ground beef (or beef and pork), breadcrumbs, milk, chopped onion, minced garlic, egg, soy sauce, sesame oil, ground ginger, black pepper, and salt. Mix everything together until well combined. Avoid over-mixing, as it can make the meatloaf tough.
  3. Form the Meatloaf:
    Transfer the meat mixture to a baking sheet or loaf pan and shape it into a loaf. If you’re using a baking sheet, you can shape it into a free-standing loaf.
  4. Make the Sweet & Spicy Glaze:
    In a small bowl, combine the gochujang, honey, soy sauce, rice vinegar, sesame oil, garlic, ginger, and brown sugar (if using). Stir until smooth. If the glaze is too thick, add a tablespoon of water to thin it out to your desired consistency.
  5. Glaze the Meatloaf:
    Brush a generous amount of the sweet and spicy Korean BBQ glaze over the top of the meatloaf, reserving some glaze for later.
  6. Bake the Meatloaf:
    Bake the meatloaf in the preheated oven for 40-50 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through. Brush with additional glaze halfway through the cooking time for extra flavor.
  7. Serve:
    Once the meatloaf is cooked, remove it from the oven and let it rest for 5-10 minutes before slicing. Garnish with chopped green onions and sesame seeds if desired. Serve with rice or your favorite side dishes.

Notes

  • You can make the glaze ahead of time and store it in the refrigerator for up to a week.
  • If you prefer a spicier meatloaf, feel free to increase the amount of gochujang or add a little bit of chili flakes.
