  • 1/2 cup heavy cream

For the Coating:

  • 4 oz dark or milk chocolate (for dipping)
  • 1/4 cup finely chopped dried strawberries or sprinkles (optional, for decoration)

Instructions

  • Prepare the Strawberry Filling:
    • In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer (do not boil).
    • Pour the hot cream over the chopped white chocolate in a heatproof bowl. Let it sit for 1-2 minutes, then stir until the chocolate is completely melted and smooth.
  • Add Strawberry Puree and Vanilla:
    • Stir in the strawberry puree and vanilla extract. Taste and add powdered sugar if you’d like extra sweetness. Stir until well combined.
  • Chill the Truffle Mixture:
    • Cover the bowl with plastic wrap and refrigerate the mixture for 1-2 hours, or until firm enough to roll into balls.
  • Shape the Truffles:
    • Once the mixture is firm, use a small cookie scoop or your hands to roll the strawberry filling into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
  • Prepare the Coating:
    • Melt the dark or milk chocolate in a heatproof bowl over a double boiler or in the microwave, stirring every 30 seconds until smooth.
  • Coat the Truffles:
    • Dip each truffle into the melted chocolate, using a fork to gently lift and allow any excess chocolate to drip off. Place the coated truffles back on the parchment-lined sheet.
  • Add Decoration (Optional):
    • If desired, sprinkle finely chopped dried strawberries or colorful sprinkles over the chocolate-coated truffles while the chocolate is still soft.
  • Chill and Set:
    • Refrigerate the truffles for about 30 minutes to set the chocolate coating. Once set, the truffles are ready to enjoy!
  • Serve:
    • Serve the strawberry truffles chilled or at room temperature. Store them in an airtight container in the refrigerator for up to 1 week.

Notes
