Description

These Swirled Brownie Cookies with a Peanut Butter Twist are the ultimate sweet treat! Combining fudgy brownies with creamy peanut butter, these cookies are rich, decadent, and oh-so-delicious. The perfect dessert for peanut butter lovers!

Ingredients

Scale
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup butter, cubed
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup peanut butter (creamy or chunky, depending on preference)
  • 1/4 cup powdered sugar (for peanut butter swirl)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Melt the Chocolate and Butter:
In a heatproof bowl, melt the chocolate chips and butter together. You can do this in the microwave in 20-second intervals, stirring between each, until completely melted and smooth. Set aside to cool slightly.
  3. Prepare the Cookie Dough:
In a large bowl, beat together the eggs, granulated sugar, and vanilla extract until light and fluffy. Stir in the melted chocolate mixture until combined.
  4. Add Dry Ingredients:
Add the flour, cocoa powder, salt, and mix until just combined. The dough should be thick and fudgy.
  5. Make the Peanut Butter Swirl:
In a small bowl, mix the peanut butter with powdered sugar until smooth and creamy.
  6. Form the Cookies:
Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, spacing them about 2 inches apart. Drop a small spoonful of the peanut butter mixture onto the center of each dough ball.
  7. Create the Swirl:
Using a toothpick or a skewer, swirl the peanut butter into the brownie dough to create a marbled effect.
  8. Bake the Cookies:
Bake for 8-10 minutes or until the edges are set but the centers are still slightly soft. The cookies will firm up as they cool.
  9. Cool and Serve:
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely. Serve and enjoy!

Notes

  • Texture Tip: For softer, chewier cookies, remove them from the oven when the centers are slightly undercooked. They’ll continue to cook as they cool.
  • Make Ahead: You can prepare the cookie dough in advance and refrigerate it for up to 3 days before baking.
  • Variations: Try adding a sprinkle of sea salt on top for a salty-sweet twist, or use dark chocolate chips for a richer flavor.
