Description

This homemade version of Taco Bell’s famous Quesarito brings all the bold flavors right to your kitchen. A delicious combination of seasoned beef, warm tortillas, melted cheese, and a tangy creamy sauce, all wrapped up in a quesadilla-style tortilla. It’s the perfect handheld meal!

For the Quesarito:

  • 2 large flour tortillas (1 for quesadilla, 1 for wrapping)
  • 1 lb ground beef
  • 1 packet taco seasoning mix (or homemade seasoning)
  • 1/2 cup water (for seasoning)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup nacho cheese sauce (or melted cheese)
  • 1/2 cup cooked white rice
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped lettuce (optional)
  • 2 tbsp taco sauce or hot sauce (optional)

For the Quesadilla Tortilla:

  • 1 large flour tortilla
  • 1/2 cup shredded cheddar cheese (for melting inside the tortilla)

Instructions

  1. Prepare the Ground Beef:
    In a large skillet, cook the ground beef over medium heat until browned, breaking it up as it cooks. Drain excess fat. Add the taco seasoning and water, stirring to combine. Simmer for 5-7 minutes until the beef is well coated and the sauce thickens.
  2. Make the Quesadilla Tortilla:
    In a separate skillet over medium heat, place the large flour tortilla. Sprinkle half of the shredded cheddar and mozzarella cheese on top of the tortilla. Once the cheese is melted and the tortilla is crispy (about 2-3 minutes), fold the tortilla in half, creating a cheesy quesadilla. Remove from heat and set aside.
  3. Assemble the Quesarito:
    Lay the quesadilla on a flat surface. On top of the quesadilla, layer the seasoned beef, rice, sour cream, nacho cheese sauce, tomatoes, lettuce, and taco sauce (if using). Be sure to leave some space around the edges for wrapping.
  4. Wrap the Quesarito:
    Carefully fold in the sides of the tortilla and roll it tightly, making sure everything stays inside. If desired, lightly toast the wrapped Quesarito on the skillet for 1-2 minutes on each side until it gets a bit crispy.
  5. Serve:
    Slice the Quesarito in half and serve with extra taco sauce or salsa on the side.

Notes

  • Customizations: Feel free to swap out the ground beef for chicken, steak, or even a vegetarian option with beans or grilled veggies.
  • Extra Kick: Add jalapeños or extra hot sauce for an extra spicy kick!
  • Make-Ahead: You can prepare the beef and rice in advance and store them in the refrigerator for up to 2 days. Reheat when ready to assemble.
