  • 8 oz elbow macaroni

  • 1/4 cup milk
  • 1 tablespoon olive oil
  • 1/2 cup diced tomatoes (optional)
  • 1/4 cup sliced green onions (optional)
  • 1/4 cup chopped cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to the package directions, drain, and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks, about 5-7 minutes.
  3. Drain any excess grease from the beef, then stir in the taco seasoning and water. Simmer for 5 minutes, allowing the mixture to thicken and absorb the flavor.
  4. Add the cooked macaroni to the skillet and stir to combine with the seasoned beef mixture.
  5. Reduce the heat to low and add the shredded cheddar and mozzarella cheese. Stir until the cheese is melted and the mixture becomes creamy.
  6. Stir in the sour cream and milk to create a smooth, creamy consistency. Season with salt and pepper to taste.
