Description

Ingredients

  • 1 packet taco seasoning
  • 2 cups water
  • 2 cups Minute rice (or other instant rice)
  • Optional toppings:
    • Crushed Doritos or tortilla chips (for serving)
    • Nacho cheese sauce
    • Shredded lettuce
    • Shredded cheese
    • Sour cream
    • Salsa
    • Sliced olives
    • Pickled jalapeños
    • Diced tomatoes

Instructions

  • In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
  • Add the taco seasoning packet, water, and Minute rice to the skillet with the beef, stirring to combine.
  • Bring the mixture to a boil, then cover the skillet and reduce the heat to the lowest setting. Let it sit covered for 5 minutes or until the rice is tender and has absorbed the liquid.
  • For serving, place a scoop of taco rice over a bed of crushed Doritos or tortilla chips. Drizzle with nacho cheese and top with your favorite taco toppings, or serve with chips as a dip!
