Instructions

  1. Step 1: Prepare the Asparagus
    Bring a pot of water to a boil and add a pinch of salt.
    Add the asparagus pieces and cook for 2-3 minutes, or until they are bright green and tender-crisp.
    Drain the asparagus and immediately transfer it to a bowl of ice water to stop the cooking process.
    Once cooled, drain again and set aside.

    Step 2: Make the Vinaigrette
    In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, honey (if using), and lemon juice.
    Add the chopped tarragon, salt, and pepper to the vinaigrette, and whisk until well combined.
