    • 1/3 cup unsweetened nut milk (for the cheese)
  • For the Gravy:
    • 5 tablespoons vegan butter
    • 5 tablespoons flour
    • 2 1/2 cups unsweetened nut milk (cashew recommended)
    • 1/2 teaspoon thyme
    • 2 tablespoons liquid aminos or light tamari
    • 2 teaspoons vegan Worcestershire sauce
    • Salt and pepper to taste

Instructions

  • Prepare the Tater Tots: Bake the tater tots according to the package directions until crispy.
  • Make the Cheese Sauce: In a saucepan over medium-low heat, melt the shredded cheese with the nut milk, whisking constantly to prevent burning. Keep covered and warm.
  • Make the Gravy: In a separate saucepan, melt the vegan butter over medium heat. Whisk in the flour and cook until light golden brown. Add thyme, liquid aminos, Worcestershire sauce, and salt and pepper. Gradually whisk in nut milk until thickened. Reduce heat to low and keep warm.
  • Assemble the Poutine: In a large bowl or serving plate, layer tater tots, cheese sauce, and gravy. Repeat layers until most tater tots are covered. Season with additional salt and pepper to taste.
