Ingredients
Scale
- 100 grams softened unsalted butter
- 75 grams soft light brown sugar
- 2 tablespoons golden syrup
- 150 grams self-rising flour
- 30 grams cocoa powder
- 1.5 teaspoons cornflour
- 2 Terry’s Chocolate Orange bars (chopped, except for 12 segments)
- 1 teaspoon orange extract (or zest of 1 orange)
- 1–2 tablespoons milk
Instructions
- Preheat oven: Preheat your oven to 180°C (350°F) standard / 160°C (320°F) fan. Grease and line an 8×8 inch baking tin with parchment paper.
- Prepare chocolate: Chop all but 12 segments of Terry’s Chocolate Orange into chunks.
- Cream butter and sugar: Beat the butter until soft, then add the sugar and cream together until light and fluffy.
- Add dry ingredients: Stir in the golden syrup, flour, cocoa powder, cornflour, chopped chocolate orange, and orange extract. Add milk to loosen the mixture if needed.
- Bake: Place even spoonfuls of the mixture onto the prepared baking trays. Bake for 10 minutes, then take out of the oven and quickly press a Terry’s Chocolate Orange segment on top of each cookie. Bake for an additional 3 minutes.
- Cool: Let cookies cool on the trays for a couple of minutes before removing and placing on a wire cooling rack to cool completely
Notes
- For a more intense orange flavor, consider adding orange zest.
