Description

Tex-Mex Grilled Cheese sandwiches are loaded with melted cheese, jalapeños, and seasoned veggies, grilled to crispy perfection with a flavorful southwestern twist.


Ingredients

  • 4 slices of bread (white or whole wheat)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup diced bell peppers (red or green)
  • 2 tablespoons diced jalapeños (fresh or pickled)
  • 2 tablespoons chopped red onion
  • 1 teaspoon taco seasoning
  • 2 tablespoons butter, softened
  • Sour cream and salsa for serving (optional)

Instructions

  1. In a bowl, mix the shredded cheeses, bell peppers, jalapeños, red onion, and taco seasoning.
  2. Butter one side of each bread slice.
  3. Heat a skillet over medium heat. Place 2 slices of bread, butter-side down, on the skillet.
  4. Divide the cheese and veggie mixture evenly over the bread slices in the skillet.
  5. Top with the remaining bread slices, butter-side up.
  6. Cook for 3–4 minutes per side until bread is golden brown and cheese is melted.
  7. Slice and serve warm with sour cream and salsa if desired.

Notes

  • Adjust jalapeño quantity based on your heat preference.
  • Add cooked chicken or beans for extra protein.
