Tex-Mex Grilled Cheese sandwiches are loaded with melted cheese, jalapeños, and seasoned veggies, grilled to crispy perfection with a flavorful southwestern twist.
Ingredients

- 4 slices of bread (white or whole wheat)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup diced bell peppers (red or green)
- 2 tablespoons diced jalapeños (fresh or pickled)
- 2 tablespoons chopped red onion
- 1 teaspoon taco seasoning
- 2 tablespoons butter, softened
- Sour cream and salsa for serving (optional)
Instructions
- In a bowl, mix the shredded cheeses, bell peppers, jalapeños, red onion, and taco seasoning.
- Butter one side of each bread slice.
- Heat a skillet over medium heat. Place 2 slices of bread, butter-side down, on the skillet.
- Divide the cheese and veggie mixture evenly over the bread slices in the skillet.
- Top with the remaining bread slices, butter-side up.
- Cook for 3–4 minutes per side until bread is golden brown and cheese is melted.
- Slice and serve warm with sour cream and salsa if desired.
Notes
- Adjust jalapeño quantity based on your heat preference.
- Add cooked chicken or beans for extra protein.
- Use gluten-free bread to make this sandwich gluten-free.
