  • 1/2 cup heavy cream

Instructions

  1. Cook the chicken:

    • Heat a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, paprika, and thyme.
    • Add 1 tablespoon of butter to the skillet, then add the chicken. Cook the chicken for 5-6 minutes on each side until browned and cooked through (internal temperature of 165°F or 74°C).
    • Once cooked, remove the chicken from the skillet and set it aside.
  2. Prepare the sauce:

    • In the same skillet, melt the remaining 3 tablespoons of butter over medium heat. Add the chopped onion and cook for about 2-3 minutes, until softened and fragrant.
    • Add the minced garlic and cook for an additional 30 seconds until fragrant.
    • Stir in the chicken broth and bring to a simmer. Let it cook for about 2 minutes to reduce slightly.
    • Add the heavy cream and Dijon mustard, stirring until well combined. Allow the sauce to simmer for 3-4 minutes until it thickens slightly. Adjust the seasoning with salt and pepper to taste.
  3. Combine the chicken and sauce:

    • Return the cooked chicken to the skillet and coat it in the creamy sauce. Let the chicken simmer in the sauce for 2-3 minutes, allowing the flavors to meld and the chicken to absorb some of the sauce.
  4. Serve:

    • Garnish the chicken with freshly chopped parsley and serve with lemon wedges on the side for a burst of freshness. This dish pairs perfectly with mashed potatoes, rice, or a side of steamed vegetables.

Notes

  • For extra richness, you can add a bit more butter to the sauce.
  • This recipe can be adapted with boneless skinless chicken thighs for a more flavorful dish.
