For the Chicken and Broth:

- 1 10-ounce can cream of mushroom soup

- 3 pounds boneless skinless chicken thighs, cut into 1-inch pieces
- 3 cups chicken broth
- 1 16-ounce bag frozen mixed vegetables, thawed
For the Dumplings:
- 1 tube (10 ounces) refrigerated flaky biscuit rounds
Instructions
- Prepare the slow cooker:
Spray a 6-quart slow cooker with nonstick spray. Add the diced onion, then top with the chicken pieces in an even layer. - Make the broth mixture:
In a medium bowl, stir together the cream of mushroom soup, cheddar cheese soup, dried thyme, garlic powder, and black pepper. Pour this mixture over the chicken. Add the chicken broth, ensuring the chicken is covered. - Cook the chicken:
Cover and cook the chicken mixture on HIGH for 4 hours. - Add the vegetables:
After 4 hours, stir in the thawed frozen mixed vegetables and cook for an additional 15 minutes. - Prepare the dumplings:
On a lightly floured surface, gently roll out each biscuit into an oval shape, about 1/4-inch thick. Cut each oval into 6 even pieces. - Add dumplings to the slow cooker:
Carefully arrange the biscuit pieces over the top of the chicken and vegetables. Cover and cook for an additional 45-60 minutes, or until the dumplings are cooked through. - Shred the chicken:
Transfer the cooked chicken to a serving platter using a slotted spoon. Use two forks to shred the chicken, then return it to the slow cooker. - Combine and serve:
Gently stir the chicken, vegetables, and dumplings to combine, allowing some dumplings to break up into the broth. Serve the chicken and dumplings warm. Garnish with chopped parsley, if desired.
