Ingredients
Scale
- 1/2 cup unsalted butter
- 1/2 cup milk
- 1 1/2 cups granulated sugar
- 1/4 cup cocoa powder
- 1/2 cup peanut butter
- 1 tsp vanilla extract
- 3 cups quick oats (rolled oats can also be used)
- Pinch of salt (optional)
Instructions
- In a medium saucepan, combine the butter, milk, sugar, and cocoa powder. Bring the mixture to a boil over medium heat, stirring frequently.
- Once it reaches a rolling boil, let it boil for 1 minute without stirring.
- Remove from heat and immediately stir in the peanut butter and vanilla extract until smooth and well combined.
- Stir in the oats until the mixture is evenly coated.
- Drop spoonfuls of the cookie mixture onto wax paper or parchment paper, forming small mounds.
- Let the cookies cool at room temperature for at least 30 minutes, or until they set and harden.
- Enjoy! These no-bake cookies can be stored in an airtight container at room temperature for up to a week.
Notes
- You can add a pinch of salt for an extra flavor boost if you prefer a sweet-salty contrast.
- For added texture, try adding chopped nuts or coconut flakes to the mixture before forming the cookies.
- If the cookies are too soft, let them sit longer at room temperature, or pop them in the fridge for faster setting.
