Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1 1/2 cups granulated sugar
  • 1/4 cup cocoa powder
  • 1/2 cup peanut butter
  • 1 tsp vanilla extract
  • 3 cups quick oats (rolled oats can also be used)
  • Pinch of salt (optional)

Instructions

  1. In a medium saucepan, combine the butter, milk, sugar, and cocoa powder. Bring the mixture to a boil over medium heat, stirring frequently.
  2. Once it reaches a rolling boil, let it boil for 1 minute without stirring.
  3. Remove from heat and immediately stir in the peanut butter and vanilla extract until smooth and well combined.
  4. Stir in the oats until the mixture is evenly coated.
  5. Drop spoonfuls of the cookie mixture onto wax paper or parchment paper, forming small mounds.
  6. Let the cookies cool at room temperature for at least 30 minutes, or until they set and harden.
