Description
The Enchirito is a delicious, hearty dish that combines the flavors of a taco and an enchilada. With seasoned ground beef, beans, melted cheese, and enchilada sauce wrapped in a soft flour tortilla, this dish is a nostalgic favorite for many.

- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (8 oz) refried beans
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can (10 oz) enchilada sauce (mild or hot, based on preference)
- 1/2 onion, finely chopped
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Chopped green onions or cilantro for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, cook the ground beef over medium heat until browned, breaking it apart with a spoon. Drain excess fat if necessary.
- Add the taco seasoning, garlic powder, cumin, and a pinch of salt and pepper to the beef, along with 1/4 cup of water. Stir and let it simmer for 5 minutes until the seasoning is well absorbed and the mixture is thickened.
- In the meantime, heat the refried beans in a separate pot over low heat until warm and smooth.
- Warm the flour tortillas in the microwave or on a skillet for about 10-15 seconds to make them more pliable.
- To assemble the Enchiritos, spread a thin layer of refried beans in the center of each tortilla. Then add a generous spoonful of the seasoned ground beef mixture. Sprinkle some cheddar and mozzarella cheese on top.
- Carefully roll up each tortilla tightly and place them seam-side down in the prepared baking dish.
- Pour the enchilada sauce evenly over the top of the rolled tortillas. Sprinkle the remaining cheese on top of the sauce.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the edges are slightly crispy.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped green onions or cilantro, if desired.
Notes
- For added flavor, you can top the Enchirito with sour cream or guacamole before serving.
- If you prefer a vegetarian version, you can substitute the ground beef with black beans or a meat alternative.
- This dish can be made ahead by assembling it and storing it in the fridge for up to 24 hours before baking.
