Ingredients
Scale
- 1 cup rolled oats
- 1/2 cup unsweetened shredded coconut
- 1/2 cup walnuts (or pecans), chopped
- 1 cup grated carrots (about 2 medium carrots)
- 1/4 cup raisins (optional, for extra sweetness)
- 1/4 cup almond butter (or any nut butter of choice)
- 2 tbsp maple syrup or honey
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp vanilla extract
- Pinch of salt
- Optional: 2-3 tbsp water (to help with consistency, if needed)
Instructions
- Prepare the Ingredients:
- In a large mixing bowl, combine the rolled oats, shredded coconut, chopped walnuts, and grated carrots. If you’re adding raisins, mix them in as well.
- Add the Wet Ingredients:
- In a separate bowl, whisk together the almond butter, maple syrup (or honey), vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt.
- Combine the Mixtures:
- Pour the wet mixture into the dry ingredients and stir until everything is well combined. If the mixture seems too dry, add 1-2 tablespoons of water until the dough sticks together when pressed.
- Form the Bliss Balls:
- Roll the mixture into tablespoon-sized balls using your hands. Press and compact them tightly to ensure they hold their shape.
- Chill and Set:
- Place the bliss balls on a parchment-lined baking sheet or plate. Refrigerate for at least 30 minutes to allow them to firm up.
- Serve and Enjoy:
- Once chilled, serve immediately or store in an airtight container in the refrigerator for up to one week.
Notes
- Storage: These bliss balls keep well in the refrigerator for up to 1 week. They can also be frozen for up to 3 months.
- Sweetness: Adjust the sweetness to your preference. You can add extra maple syrup or honey if you like them sweeter.
- Nut-Free Version: If you’re looking for a nut-free version, replace the almond butter with sunflower seed butter or a similar seed-based spread.
- Texture Tip: If you like a smoother texture, you can blend the oats and walnuts before adding the rest of the ingredients. This will make the balls more smooth and dough-like.
