- 1 cup all-purpose flour
- 1/2 cup almond flour
- 2 tbsp matcha powder

- 1/2 cup unsweetened applesauce
- 1 large egg
- 1/4 cup almond milk (or any milk of choice)

- 1 tbsp coconut oil, melted

- 1 tbsp almond milk (or any milk of choice)
- 1/2 tsp matcha powder
- 1/4 tsp vanilla extract (optional)
Instructions
- Preheat & Prep:
- Preheat your oven to 350°F (175°C).
- Grease a donut pan with non-stick spray or lightly oil it to prevent sticking.
- Make the Donut Batter:
- In a large mixing bowl, whisk together the all-purpose flour, almond flour, matcha powder, baking powder, baking soda, salt, and coconut sugar.
- In a separate bowl, combine the applesauce, egg, almond milk, vanilla extract, and melted coconut oil.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix to keep the donuts light and fluffy.
- Fill the Donut Pan:
- Spoon or pipe the donut batter into the donut pan, filling each mold about 2/3 full.
- Bake the Donuts:
- Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
- Let the donuts cool in the pan for 5 minutes, then remove them and transfer to a wire rack to cool completely.
- Make the Matcha Glaze:
- In a small bowl, whisk together the powdered sugar, almond milk, matcha powder, and vanilla extract (if using). Add more almond milk if the glaze is too thick or more powdered sugar if it’s too thin.
- Glaze the Donuts:
- Once the donuts are cool, dip the tops into the matcha glaze, then place them back on the wire rack to let the glaze set.
- If desired, garnish with sprinkles, coconut flakes, or extra matcha powder.
