  • For the Mascarpone Cream:
    • 4 large egg yolks
    • ½ cup granulated sugar
    • 1 cup mascarpone cheese, softened
    • 1 cup heavy cream, whipped to soft peaks
  • For the Coffee Soak:
    • 1 cup strong brewed espresso (or strong coffee), cooled
    • 2 tablespoons coffee liqueur (optional)
  • For the Assembly:
    • 2430 ladyfingers (Savoiardi)
    • Unsweetened cocoa powder (for dusting)
    • Grated chocolate or chocolate curls (optional)

Instructions

  • Prepare the Mascarpone Cream:
    • In a large mixing bowl, whisk together the egg yolks and sugar until thick and pale (about 5 minutes).
    • Add the softened mascarpone cheese to the egg mixture and continue whisking until smooth.
    • In a separate bowl, whip the heavy cream until soft peaks form, then gently fold the whipped cream into the mascarpone mixture until fully incorporated.
  • Prepare the Coffee Soak:
    • In a shallow dish, combine the brewed espresso and coffee liqueur (if using).
    • Allow the coffee mixture to cool completely before assembling.
  • Assemble the Tiramisu:
    • Quickly dip each ladyfinger into the coffee mixture, ensuring both sides are soaked but not soggy.
    • Layer the soaked ladyfingers in the bottom of a serving dish or deep baking dish.
    • Spread half of the mascarpone cream evenly over the ladyfingers.
    • Add a second layer of soaked ladyfingers on top of the cream, then spread the remaining mascarpone cream over the second layer.
    • Smooth the top with a spatula.
  • Chill and Garnish:
    • Cover the tiramisu and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the dessert to set.
    • Just before serving, dust the top generously with unsweetened cocoa powder.
    • Optionally, garnish with grated chocolate or chocolate curls for added richness.
