- For the Mascarpone Cream:
- 4 large egg yolks
- ½ cup granulated sugar
- 1 cup mascarpone cheese, softened
- 1 cup heavy cream, whipped to soft peaks
- For the Coffee Soak:
- 1 cup strong brewed espresso (or strong coffee), cooled
- 2 tablespoons coffee liqueur (optional)
- For the Assembly:
- 24–30 ladyfingers (Savoiardi)
- Unsweetened cocoa powder (for dusting)
- Grated chocolate or chocolate curls (optional)
Instructions
- Prepare the Mascarpone Cream:
- In a large mixing bowl, whisk together the egg yolks and sugar until thick and pale (about 5 minutes).
- Add the softened mascarpone cheese to the egg mixture and continue whisking until smooth.
- In a separate bowl, whip the heavy cream until soft peaks form, then gently fold the whipped cream into the mascarpone mixture until fully incorporated.
- Prepare the Coffee Soak:
- In a shallow dish, combine the brewed espresso and coffee liqueur (if using).
- Allow the coffee mixture to cool completely before assembling.
- Assemble the Tiramisu:
- Quickly dip each ladyfinger into the coffee mixture, ensuring both sides are soaked but not soggy.
- Layer the soaked ladyfingers in the bottom of a serving dish or deep baking dish.
- Spread half of the mascarpone cream evenly over the ladyfingers.
- Add a second layer of soaked ladyfingers on top of the cream, then spread the remaining mascarpone cream over the second layer.
- Smooth the top with a spatula.
- Chill and Garnish:
- Cover the tiramisu and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the dessert to set.
- Just before serving, dust the top generously with unsweetened cocoa powder.
- Optionally, garnish with grated chocolate or chocolate curls for added richness.
