Ingredients
Scale
- For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- For the cheesecake filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup mascarpone cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/4 cup heavy cream
- 1/4 cup brewed espresso or strong coffee (cooled)
- For the tiramisu layer:
- 18–20 ladyfingers
- 1/4 cup brewed espresso or strong coffee (cooled)
- 1 tablespoon coffee liqueur (optional)
- For the topping:
- Cocoa powder for dusting
- Chocolate shavings or grated chocolate (optional)
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- To make the crust, combine the graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove from the oven and set aside to cool.
- In a large bowl, beat the cream cheese, mascarpone cheese, and sugar together until smooth and creamy. Add the vanilla extract and beat again.
- One at a time, add the eggs, beating well after each addition. Scrape down the sides of the bowl as needed. Add the heavy cream and brewed espresso, and mix until fully incorporated.
- Pour the cheesecake filling over the cooled crust and smooth the top. Tap the pan on the counter to remove any air bubbles.
- Bake the cheesecake for 50–60 minutes, or until the edges are set but the center still slightly jiggles. Turn off the oven and let the cheesecake cool in the oven with the door cracked for 1 hour. Then, remove it from the oven and cool to room temperature. Refrigerate for at least 4 hours or overnight.
- Once the cheesecake is chilled, prepare the tiramisu layer by dipping the ladyfingers quickly into the cooled espresso (and coffee liqueur, if using). Arrange the dipped ladyfingers in a single layer over the cheesecake.
- Dust the top of the cheesecake with cocoa powder and sprinkle with chocolate shavings if desired. Slice and serve chilled.
Notes
- For a stronger coffee flavor, use espresso instead of regular brewed coffee.
- If you prefer a no-bake cheesecake, you can substitute the eggs with gelatin or agar-agar, but the texture will be different.
- This dessert can be made ahead of time and stored in the fridge for up to 3 days.
