Description

These Tiramisu Cookies bring the classic flavors of the beloved Italian dessert into a chewy, coffee-flavored cookie. With hints of espresso, mascarpone, and cocoa, these cookies are a delicious twist on traditional tiramisu. Perfect for coffee lovers and dessert enthusiasts alike!

Ingredients

Scale

For the Cookie Dough:

  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tablespoon instant espresso powder (or strong brewed coffee)
  • 1 teaspoon vanilla extract
  • 2 tablespoons mascarpone cheese, softened

For the Topping:

  • 2 tablespoons cocoa powder (unsweetened)
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Prepare the Dough: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
    • In a separate bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
    • Add the egg, espresso powder (or brewed coffee), and vanilla extract to the butter mixture. Mix until well combined.
    • Stir in the mascarpone cheese until smooth.
    • Gradually add the dry ingredients to the wet mixture and stir until just combined. The dough should be soft but not too sticky.
  3. Shape the Cookies: Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with the back of a spoon.
  4. Bake the Cookies: Bake the cookies in the preheated oven for 10-12 minutes or until the edges are golden, and the centers are set but still soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  5. Prepare the Topping: In a small bowl, whisk together cocoa powder and powdered sugar. Once the cookies are completely cool, sift the cocoa mixture over the cookies for a light dusting.
  6. Serve: Enjoy the cookies immediately, or store them in an airtight container at room temperature for up to 3 days.

Notes

  • For an extra tiramisu flavor, you can dip the cookies in coffee or espresso before baking them.
  • The mascarpone cheese adds a creamy texture to the dough but can be substituted with cream cheese if needed.
  • These cookies pair perfectly with a cup of coffee or espresso, just like a traditional tiramisu!
