These Toasted Marshmallow Caramel Rice Krispie Treats are a decadent twist on the classic treat! For the Rice Krispie Treats:

  • 6 cups Rice Krispies cereal
  • 1/4 cup unsalted butter
  • 1 (10 oz) bag of mini marshmallows (plus extra for toasting)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

For the Caramel Sauce:

  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar, packed
  • 2 tablespoons heavy cream
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Caramel Sauce:
    • In a medium saucepan, melt the butter over medium heat. Add the brown sugar, heavy cream, and salt. Stir continuously until the sugar dissolves and the mixture comes to a gentle boil.
    • Allow it to simmer for 2-3 minutes, then remove from heat and stir in the vanilla extract. Set aside to cool slightly.
  2. Toast the Marshmallows:
    • Preheat your broiler to high. Place a layer of mini marshmallows on a baking sheet lined with parchment paper.
    • Toast the marshmallows under the broiler for 1-2 minutes, watching closely, until they are golden brown and slightly charred. Be careful not to burn them. Remove from the oven and set aside.
  3. Make the Rice Krispie Treats:
    • In a large pot, melt 1/4 cup of butter over medium heat. Add the mini marshmallows (not the toasted ones) and stir until completely melted and smooth.
    • Stir in the vanilla extract and a pinch of salt.
    • Add the Rice Krispies cereal to the marshmallow mixture and stir until the cereal is fully coated with the marshmallow mixture.
  4. Assemble the Treats:
    • Press the Rice Krispie mixture into a greased 9×13-inch pan, making sure it’s evenly spread out and compacted.
    • Drizzle the caramel sauce evenly over the top of the Rice Krispie mixture.
    • Gently press the toasted marshmallows on top of the caramel layer.
  5. Cool and Serve:
    • Allow the treats to cool for about 30 minutes before cutting them into squares or rectangles. This will help the caramel set and make slicing easier.

Notes

  • For extra flavor, you can add a handful of mini chocolate chips on top of the marshmallows before serving.
  • If you prefer a thicker layer of caramel, feel free to double the caramel sauce ingredients.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
