These Toasted Marshmallow Caramel Rice Krispie Treats are a decadent twist on the classic treat! The gooey, toasted marshmallow flavor combined with a rich caramel layer creates a perfectly indulgent snack or dessert. Chewy, crunchy, and oh-so-sweet, these treats are sure to be a hit with everyone!

For the Rice Krispie Treats:
- 6 cups Rice Krispies cereal
- 1/4 cup unsalted butter
- 1 (10 oz) bag of mini marshmallows (plus extra for toasting)
- 1/2 teaspoon vanilla extract
- Pinch of salt
For the Caramel Sauce:
- 1/2 cup unsalted butter
- 1/2 cup brown sugar, packed
- 2 tablespoons heavy cream
- 1/4 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare the Caramel Sauce:
- In a medium saucepan, melt the butter over medium heat. Add the brown sugar, heavy cream, and salt. Stir continuously until the sugar dissolves and the mixture comes to a gentle boil.
- Allow it to simmer for 2-3 minutes, then remove from heat and stir in the vanilla extract. Set aside to cool slightly.
- Toast the Marshmallows:
- Preheat your broiler to high. Place a layer of mini marshmallows on a baking sheet lined with parchment paper.
- Toast the marshmallows under the broiler for 1-2 minutes, watching closely, until they are golden brown and slightly charred. Be careful not to burn them. Remove from the oven and set aside.
- Make the Rice Krispie Treats:
- In a large pot, melt 1/4 cup of butter over medium heat. Add the mini marshmallows (not the toasted ones) and stir until completely melted and smooth.
- Stir in the vanilla extract and a pinch of salt.
- Add the Rice Krispies cereal to the marshmallow mixture and stir until the cereal is fully coated with the marshmallow mixture.
- Assemble the Treats:
- Press the Rice Krispie mixture into a greased 9×13-inch pan, making sure it’s evenly spread out and compacted.
- Drizzle the caramel sauce evenly over the top of the Rice Krispie mixture.
- Gently press the toasted marshmallows on top of the caramel layer.
- Cool and Serve:
- Allow the treats to cool for about 30 minutes before cutting them into squares or rectangles. This will help the caramel set and make slicing easier.
Notes
- For extra flavor, you can add a handful of mini chocolate chips on top of the marshmallows before serving.
- If you prefer a thicker layer of caramel, feel free to double the caramel sauce ingredients.
- Store leftovers in an airtight container at room temperature for up to 3 days.
