- 100 g light brown sugar
- 60 g caster sugar
- 1 large egg
- ½ tsp vanilla extract
- ½ tsp almond extract
- 150 g plain flour
- 75 g cocoa powder
- ½ tsp bicarbonate of soda
- ½ tsp baking powder
- ½ tsp salt
- 300 g Toblerone (mix of white, milk, and dark), chopped
Instructions
- Prepare the Cookie Dough:
- In a large mixing bowl, cream the butter, light brown sugar, and caster sugar together until light and fluffy.
- Add the egg, vanilla extract, and almond extract, then mix until smooth.
- Combine Dry Ingredients:
- Sift in the plain flour, cocoa powder, baking powder, bicarbonate of soda, and salt.
- Fold the dry ingredients into the wet mixture until just combined.
- Add Toblerone:
- Gently fold the chopped Toblerone into the dough, ensuring even distribution.
- Shape and Chill:
- Divide the dough into 8 even portions (approximately 110 g each).
- Roll each portion into a ball, then place on a baking tray lined with parchment paper.
- Freeze the cookie dough balls for at least 1 hour.
- Bake the Cookies:
- Preheat your oven to 200°C (180°C fan) 30 minutes before baking.
- Place 2–3 dough balls on a baking tray, as these cookies are very large.
- Bake for 15 minutes for gooey cookies.
- Final Touch:
- If the cookies need flattening, gently tap the tray immediately after removing it from the oven.
- Allow the cookies to cool on the tray for 15 minutes before serving.
