Tofu Scramble Breakfast Sandwiches are a delicious, plant-based alternative to scrambled eggs, featuring seasoned tofu, sautéed vegetables, and creamy avocado all sandwiched between warm, toasted buns. Perfect for a healthy, satisfying breakfast or brunch.

- 1 block firm tofu (14 oz), drained and crumbled
- 1 tbsp olive oil
- 1/4 cup red bell pepper, diced
- 1/4 cup onion, diced
- 1/4 cup spinach, chopped
- 1/4 tsp turmeric (for color and flavor)
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 1/2 avocado, sliced
- 4 whole grain or regular sandwich buns
- Vegan mayonnaise or mustard (optional, for spreading)
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced bell pepper and onion and sauté for 3–4 minutes until softened.
- Add the crumbled tofu to the skillet along with turmeric, garlic powder, smoked paprika, salt, and pepper. Stir well to combine and cook for 5–7 minutes, allowing the tofu to absorb the flavors and slightly brown.
- Stir in the chopped spinach and cook for another 1–2 minutes until the spinach wilts. Taste and adjust seasoning if necessary.
- While the tofu mixture is cooking, toast the sandwich buns until golden brown.
- Assemble the sandwiches by spreading vegan mayonnaise or mustard on the bottom half of each bun (optional). Then, top with a generous amount of the tofu scramble mixture, followed by slices of avocado.
- Place the top half of the bun on the sandwich and serve immediately, garnished with fresh parsley if desired.
Notes
- If you like a bit of heat, you can add some hot sauce or red pepper flakes to the tofu scramble mixture.
- For extra flavor, sauté some mushrooms or add nutritional yeast to the tofu scramble.
- These sandwiches can be made ahead and stored in the fridge for 1–2 days. Reheat in a skillet or microwave before serving.
