Description

Tortellini Soup is a hearty and comforting dish filled with tender cheese tortellini, savory vegetables, and a rich, flavorful broth. Perfect for a cozy meal on a chilly day, this soup is quick to prepare and sure to please the whole family.


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups chicken broth (or vegetable broth for a vegetarian version)
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 (9 oz) package cheese tortellini
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese (optional, for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté for 2-3 minutes until softened and fragrant.
  2. Add diced carrot and celery, and cook for an additional 3-4 minutes, stirring occasionally.
  3. Pour in the diced tomatoes (with juices) and chicken broth. Stir in the basil, oregano, salt, and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce heat and let simmer for 10 minutes until vegetables are tender.
  5. Add the tortellini to the pot and cook according to package instructions, usually about 3-5 minutes.
  6. Stir in chopped spinach and cook for an additional 2 minutes until spinach is wilted.
  7. Remove from heat and ladle into bowls. Top with Parmesan cheese, if desired, and serve hot.

Notes

  • For extra flavor, add a splash of heavy cream or a sprinkle of red pepper flakes.
  • Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stove or in the microwave.
