Instructions

  1. Prepare the Filling:
    In a small bowl, combine the mozzarella cheese, Parmesan cheese, and Italian seasoning. If you’re using additional toppings such as pepperoni, bell peppers, or mushrooms, prepare them by slicing them into small, bite-sized pieces.

  2. Assemble the Pizza Pockets:
    Lay the tortillas flat on a clean surface.
    In the center of each tortilla, spread a couple of tablespoons of pizza sauce.
    Sprinkle a generous amount of the mozzarella and Parmesan cheese mixture over the sauce.
    Add any additional toppings such as pepperoni, bell peppers, or mushrooms, if using.

  3. Fold and Seal:
    Fold the sides of the tortilla inwards, then fold up the bottom and top, creating a sealed pocket. Gently press the edges to ensure the filling stays inside. You should now have a square or rectangular pocket.

  4. Cook the Pizza Pockets:
    Heat the olive oil in a large skillet over medium heat.
    Once the skillet is hot, place the pizza pockets seam-side down in the pan. Cook for 2-3 minutes on each side, pressing gently with a spatula to ensure the tortillas become crispy and golden brown. Flip carefully and cook for another 2-3 minutes on the other side until both sides are crispy and the cheese is melted inside.
