  • 1 package (7 oz) deli turkey
  • 1 large tomato, thinly sliced
  • A handful of greens (e.g., sprouts, microgreens, spinach)
  • A few slices of red onion
  • 1/4 cup mayonnaise
  • 1/4 cup pesto

Instructions

  1. Preheat your oven to 400°F (200°C). Toast the focaccia in the oven for 5–8 minutes until slightly crispy.
  2. In a small bowl, mix together the mayonnaise and pesto to create pesto mayo.
  3. Slice the toasted focaccia horizontally. Keep the top piece aside.
  4. Spread a layer of pesto mayo on the bottom piece of focaccia. Add a layer of deli turkey, followed by tomato slices, greens, and red onion. Add more pesto mayo on top.
  5. Place the top piece of focaccia back on the sandwich and gently press down. Cut the sandwich into 6 pieces for easy serving.
