- 1 loaf of Trader Joe’s Sun-Dried Tomato Focaccia
- 1 package (7 oz) deli turkey
- 1 large tomato, thinly sliced
- A handful of greens (e.g., sprouts, microgreens, spinach)
- A few slices of red onion
- 1/4 cup mayonnaise
- 1/4 cup pesto
Instructions
- Preheat your oven to 400°F (200°C). Toast the focaccia in the oven for 5–8 minutes until slightly crispy.
- In a small bowl, mix together the mayonnaise and pesto to create pesto mayo.
- Slice the toasted focaccia horizontally. Keep the top piece aside.
- Spread a layer of pesto mayo on the bottom piece of focaccia. Add a layer of deli turkey, followed by tomato slices, greens, and red onion. Add more pesto mayo on top.
- Place the top piece of focaccia back on the sandwich and gently press down. Cut the sandwich into 6 pieces for easy serving.
Notes
- For extra flavor, add a pinch of salt and pepper to the tomato slices.
- Customize the greens with arugula, lettuce, or your choice.
