  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup mixed nuts (cherries, pineapple, apricots, etc.)
  • 1/2 cup walnuts, chopped
  • 1/4 cup candied cherries, cut in half
  • 1/4 cup candied green cherries, cut in half
  • 1/4 cup candied red cherries, cut in half

Instructions

  • Preheat the oven to 325°F (163°C). Grease and flour a loaf pan or bread mold.
  • In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.
  • In a large bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
  • Add the eggs one by one, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until everything is just combined.
  • Gently fold in the mixed nuts and chopped walnuts until evenly distributed throughout the batter.
  • Pour the batter into the prepared loaf pan and smooth the surface. Decorate the top with the halved candied cherries.
  • Bake for 70-80 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the mold for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For added flavor, consider soaking the mixed fruits in rum or brandy overnight before adding them to the batter. This cake can be made in advance and improves in flavor as it sits.
