Description

Transform your leftover mashed potatoes into delicious, cheesy puffs! These easy-to-make snacks are crispy on the outside and creamy on the inside, perfect for any occasion as a tasty appetizer or side dish.

Ingredients

Scale
  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Bread crumbs for coating (optional)
  • Olive oil or cooking spray for greasing

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Grease a baking sheet with olive oil or cooking spray.
  • Mix Ingredients: In a large mixing bowl, combine leftover mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, finely chopped green onions, all-purpose flour, beaten egg, garlic powder, salt, and pepper. Mix until well combined.
  • Shape the Puffs: Shape the mixture into small balls or patties and place them on the prepared baking sheet.
  • Add Breadcrumbs (Optional): If desired, roll the potato cheese puffs in bread crumbs for extra crispiness.
  • Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese puffs are golden brown and crispy on the outside.
  • Cool and Serve: Remove from the oven and let cool slightly before serving.
  • Enjoy: Serve the leftover mashed potato cheese puffs hot as a tasty snack or side dish.

Notes

  • For a healthier version, skip the bread crumbs and bake without them.
  • You can customize the cheese by using different types such as mozzarella or pepper jack.
