  • 1 packet dry onion soup mix
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) beef broth
  • 1/2 cup water
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 8 oz egg noodles (or your favorite noodles)
  • 2 tbsp cornstarch (optional, to thicken the gravy)
  • 2 tbsp cold water (if using cornstarch)

Instructions

  1. Prepare the Beef and Sauce:
    • In the crockpot, add the beef stew meat (or beef tips), dry onion soup mix, cream of mushroom soup, beef broth, and 1/2 cup water. Stir to combine.
    • Add the garlic powder, onion powder, thyme, salt, and pepper. Mix well to coat the beef in the seasonings.
  2. Slow Cook the Beef:
    • Cover and cook on low for 7-8 hours, or until the beef is tender and easily shreds with a fork. Alternatively, you can cook on high for 3-4 hours if you’re short on time.
  3. Prepare the Noodles:
    • About 30 minutes before the beef is done, cook the egg noodles according to the package instructions. Drain and set aside.
  4. Thicken the Gravy (Optional):
    • If you prefer a thicker gravy, combine the cornstarch with the 2 tablespoons of cold water to make a slurry. About 30 minutes before serving, stir the cornstarch mixture into the slow cooker. Stir well, then cover and cook for the remaining time to thicken the gravy.
  5. Serve:
    • Once the beef is tender and the gravy is thickened (if desired), serve the beef tips and gravy over the cooked egg noodles.
    • Garnish with fresh parsley, if desired, and enjoy!
