Ingredients
Scale
- 2 lbs beef stew meat or beef tips
- 1 packet dry onion soup mix
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) beef broth
- 1/2 cup water
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- Salt and pepper, to taste
- 8 oz egg noodles (or your favorite noodles)
- 2 tbsp cornstarch (optional, to thicken the gravy)
- 2 tbsp cold water (if using cornstarch)
Instructions
- Prepare the Beef and Sauce:
- In the crockpot, add the beef stew meat (or beef tips), dry onion soup mix, cream of mushroom soup, beef broth, and 1/2 cup water. Stir to combine.
- Add the garlic powder, onion powder, thyme, salt, and pepper. Mix well to coat the beef in the seasonings.
- Slow Cook the Beef:
- Cover and cook on low for 7-8 hours, or until the beef is tender and easily shreds with a fork. Alternatively, you can cook on high for 3-4 hours if you’re short on time.
- Prepare the Noodles:
- About 30 minutes before the beef is done, cook the egg noodles according to the package instructions. Drain and set aside.
- Thicken the Gravy (Optional):
- If you prefer a thicker gravy, combine the cornstarch with the 2 tablespoons of cold water to make a slurry. About 30 minutes before serving, stir the cornstarch mixture into the slow cooker. Stir well, then cover and cook for the remaining time to thicken the gravy.
- Serve:
- Once the beef is tender and the gravy is thickened (if desired), serve the beef tips and gravy over the cooked egg noodles.
- Garnish with fresh parsley, if desired, and enjoy!
Notes
- Make Ahead: This recipe is great for meal prep. The beef can be cooked and stored separately, and the noodles can be reheated before serving.
- Vegetable Additions: Feel free to add vegetables such as carrots or peas during the last hour of cooking for a complete meal.
- Freezing Tip: You can freeze the beef and gravy mixture (without noodles) for up to 3 months. Just reheat and serve with freshly cooked noodles.
