For the Lava Centers:

4 oz semi-sweet chocolate, chopped

Instructions

1. Make the Lava Center:

In a small saucepan, combine the chopped semi-sweet chocolate and heavy cream. Heat over low heat, stirring constantly, until the chocolate is fully melted and the mixture is smooth.

Remove from heat and set aside to cool slightly. Once slightly cooled, chill the mixture in the fridge for about 30 minutes or until firm enough to scoop.
2. Prepare the Muffins:

Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper muffin liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, granulated sugar, and brown sugar.

In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.

Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

Stir in the semi-sweet, white chocolate, and milk chocolate chips, folding them into the batter gently.
3. Assemble the Muffins:

Spoon a small amount of muffin batter (about a tablespoon) into each muffin cup.

Take a small spoonful of the chilled chocolate lava center and place it in the middle of each muffin.

Cover the chocolate center with more muffin batter until each muffin cup is about 3/4 full.
4. Bake the Muffins:

Bake the muffins for 18-22 minutes, or until a toothpick inserted into the edge of the muffin comes out clean (but not touching the lava center). The center should remain molten and gooey.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
