Ingredients

Scale
  • For the Crust:
    • 1 ½ cups graham cracker crumbs (or digestive biscuit crumbs)
    • ¼ cup granulated sugar
    • ½ cup unsalted butter, melted
  • For the Chocolate Layers:
    • 1 cup dark chocolate chips
    • 1 cup milk chocolate chips
    • 1 cup semi-sweet chocolate chips
    • 1 ½ cups heavy cream (divided)
    • 1 tablespoon unsalted butter (for each chocolate layer)
  • For the Chocolate Ganache:
    • 1 cup semi-sweet chocolate chips
    • ½ cup heavy cream
  • For Garnish:
    • Chocolate shavings or curls
    • Fresh berries (blackberries and raspberries)

Instructions

  • Prepare the Crust:
    • Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
    • In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until evenly combined.
    • Press the crumb mixture firmly into the bottom of the prepared pan to create an even layer.
    • Bake the crust for 8-10 minutes until golden brown, then set aside to cool.
  • Make the Chocolate Layers:
    • Dark Chocolate Layer:
      • In a microwave-safe bowl, combine the dark chocolate chips, ½ cup heavy cream, and 1 tablespoon butter.
      • Microwave in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth.
      • Pour the dark chocolate mixture over the cooled crust and spread evenly. Refrigerate to set.
    • Milk Chocolate Layer:
      • Repeat the same process with the milk chocolate chips, ½ cup heavy cream, and 1 tablespoon butter.
      • Once the dark chocolate layer is set, pour the milk chocolate mixture over it and spread evenly. Refrigerate again.
    • Semi-Sweet Chocolate Layer:
      • Repeat the same process with the semi-sweet chocolate chips, ½ cup heavy cream, and 1 tablespoon butter.
      • Pour over the set milk chocolate layer and refrigerate to firm up.
  • Make the Ganache:
    • In a small saucepan or microwave-safe bowl, heat the heavy cream until just simmering.
    • Pour the hot cream over the semi-sweet chocolate chips and let it sit for 1-2 minutes.
    • Stir until the mixture is smooth and glossy.
    • Pour the ganache over the top chocolate layer and spread it evenly.
  • Chill and Garnish:
    • Refrigerate the bars for at least 2-3 hours to allow all layers to set completely.
    • Once set, remove the bars from the pan and slice into squares.
    • Garnish with chocolate shavings or curls and fresh berries for a beautiful presentation.

Notes

Ensure each chocolate layer is fully set before adding the next layer for the best results.
