Description

For the muffins:

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder

  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup buttermilk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup milk chocolate chips

For the chocolate drizzle:

  • ½ cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups.
  2. Make the dry ingredients: In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. Mix the wet ingredients: In another bowl, whisk together the sugar, eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients and stir just until combined. Be careful not to overmix the batter.
  5. Add the chocolate chips: Gently fold in the semi-sweet and milk chocolate chips, ensuring they are evenly distributed.
  6. Fill the muffin tin: Spoon the batter evenly into the muffin cups, filling each about ¾ full.
  7. Bake the muffins: Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean or with just a few crumbs.
  8. Prepare the chocolate drizzle: While the muffins are cooling, melt the semi-sweet chocolate chips and heavy cream in a microwave-safe bowl, stirring every 20 seconds, until smooth.
  9. Drizzle the chocolate: Once the muffins are cooled, drizzle the melted chocolate over the top of each muffin for an extra chocolatey touch.

Notes

  • For an extra touch, add a handful of white chocolate chips along with the semi-sweet and milk chocolate chips.
