- 4 large eggs
- 3/4 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup milk
- 1 tsp vanilla extract
- For the filling: 1 cup heavy cream, whipped
- 1/2 cup semi-sweet chocolate chips, melted
- For the frosting: 1 cup semi-sweet chocolate, chopped
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease it.
- In a bowl, whisk eggs and sugar until pale and fluffy.
- In another bowl, sift together flour, cocoa powder, baking powder, and salt.
- Gradually fold the dry ingredients into the egg mixture.
- Mix in milk and vanilla extract until smooth.
- Pour batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes, or until the cake springs back when touched.
- Immediately turn the cake onto a clean kitchen towel dusted with cocoa powder. Peel off parchment paper.
- While warm, roll the cake gently with the towel and let cool completely.
- For the filling, fold melted chocolate into whipped cream gently.
- Unroll the cooled cake and spread the chocolate whipped cream evenly over it.
- Roll the cake back up without the towel and chill for 30 minutes.
- For the frosting, heat heavy cream until simmering, pour over chopped chocolate, and stir until smooth.
- Spread the ganache over the chilled cake roll and refrigerate until set.
- Slice and serve chilled.
