- 1 cup diced pineapple (fresh or canned)
- ¼ cup lightly packed brown sugar
- 1 (6 oz.) can pineapple juice (about ¾ cup)
- ½ cup ketchup
- ¼ cup apple cider vinegar
- 2 tablespoons maple syrup
- ½ teaspoon garlic powder
- ½ teaspoon hot Hungarian paprika
- ½ teaspoon black pepper
- ½ teaspoon table salt
Instructions
- Heat olive oil in a medium saucepan over medium-high heat.
- Add diced pineapple and cook, stirring occasionally, until golden brown and slightly charred, about 4–6 minutes.
- Stir in brown sugar and cook until bubbly and slightly reduced.
- Add pineapple juice, ketchup, apple cider vinegar, maple syrup, garlic powder, paprika, black pepper, and salt.
- Bring to a boil, then reduce heat to maintain a low simmer.
- Cook until the sauce is slightly reduced and thickened, about 15–20 minutes.
- Remove from heat and let cool for at least 10 minutes before serving.
Notes
- For added heat, incorporate ¼ teaspoon of cayenne pepper.
- This sauce is excellent on grilled chicken, ribs, seafood, or as a dipping sauce for appetizers.
- Store any leftovers in an airtight container in the refrigerator for up to 5 days.
