Description

A delicious and decadent treat that combines rich chocolate brownies with layers of creamy caramel and Tunnocks Caramel Wafers.


Ingredients

Scale
  • 200 grams unsalted butter
  • 300 grams caster sugar
  • 200 grams dark chocolate
  • 3 large eggs
  • 100 grams plain flour
  • 30 grams cocoa powder
  • 10 Tunnocks Caramel Wafers
  • 300 grams Carnations Caramel (or homemade caramel sauce)
  • Salt to taste (optional)

Instructions

  • Preheat oven: Preheat your oven to 180°C (350°F) standard / 160°C (320°F) fan. Line a 9×9 inch baking tin.
  • Prepare caramel: Add caramel to a bowl and stir to loosen. Add salt if desired.
  • Melt chocolate and butter: Break dark chocolate into chunks and microwave in 20-second bursts until smooth. Melt butter in the same way.
  • Cream butter and sugar: Add melted butter to a large bowl with caster sugar and whisk for 1 minute.
  • Add eggs: Add eggs one by one and whisk thoroughly until pale and smooth.
  • Add dry ingredients: Gently fold in melted dark chocolate, then sifted flour and cocoa powder.
  • Assemble brownies: Pour half of the brownie mixture into the prepared tin. Spread with half of the caramel sauce. Press Tunnocks Caramel Wafers into the brownie mix. Pour on the remaining brownie mixture and smooth out. Dollop on remaining caramel sauce and swirl with a knife or cake skewer.
  • Bake: Bake for 32-35 minutes, or until the middle has a slight wobble and a toothpick inserted comes out with a few wet crumbs.

Notes

  • For a richer flavor, use high-quality dark chocolate.
  • Let the brownies cool before cutting for cleaner edges.
