- 1/4 cup breadcrumbs

- Salt and pepper to taste
- 1 tablespoon olive oil (for sautรฉing)
- 1 package puff pastry sheets (usually 2 sheets per package, thawed)
- 1 egg (beaten, for egg wash)
- 1 tablespoon fresh parsley (optional, for garnish)
Instructions
- Heat the olive oil in a pan over medium heat. Add the chopped onion and sautรฉ for 3-4 minutes until softened.
- In a large mixing bowl, combine the ground turkey, cranberry sauce, sautรฉed onions, breadcrumbs, thyme, sage, salt, and pepper. Mix well until everything is evenly incorporated.
- Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheets on a lightly floured surface. If necessary, trim the edges to create a rectangle shape.
- Divide the turkey mixture into two equal portions. Place one portion along the center of each puff pastry sheet to form a long sausage shape. Be sure to leave some space on the edges.
- Roll the puff pastry over the turkey mixture, folding the sides in as you go to seal the roll. Place the seam side down on the baking sheet.
- Brush the top of each roll with the beaten egg to give them a golden finish when baked.
- Cut each roll into 4-5 pieces, depending on your desired size of sausage rolls.
- Bake for 20-25 minutes or until the puff pastry is golden and crispy, and the turkey mixture is cooked through (internal temperature of 165ยฐF or 74ยฐC).
- Remove from the oven and let the sausage rolls cool slightly before serving. Optionally garnish with fresh parsley.
- Serve with extra cranberry sauce or gravy for dipping, if desired.

- For a lighter version, you can substitute ground turkey with chicken or a plant-based meat alternative.
- If you prefer a more pronounced cranberry flavor, you can add a bit more cranberry sauce to the turkey mixture.
- These rolls can be made ahead of time! Simply prepare and freeze them before baking, then bake from frozen for 25-30 minutes when ready to serve.
