Description

Turkey and Cranberry Sausage Rolls are a delicious and savory twist on the classic sausage roll. Made with ground turkey, tangy cranberry sauce, and aromatic herbs, all wrapped in a golden, flaky puff pastry.   • 1 pound (450g) ground turkey
  • 1/4 cup cranberry sauce (preferably homemade or a good-quality store-bought one)
  • 1/4 cup finely chopped onion
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for sautรฉing)
  • 1 package puff pastry sheets (usually 2 sheets per package, thawed)
  • 1 egg (beaten, for egg wash)
  • 1 tablespoon fresh parsley (optional, for garnish)

Instructions

  1. Heat the olive oil in a pan over medium heat. Add the chopped onion and sautรฉ for 3-4 minutes until softened.
  2. In a large mixing bowl, combine the ground turkey, cranberry sauce, sautรฉed onions, breadcrumbs, thyme, sage, salt, and pepper. Mix well until everything is evenly incorporated.
  3. Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  4. Roll out the puff pastry sheets on a lightly floured surface. If necessary, trim the edges to create a rectangle shape.
  5. Divide the turkey mixture into two equal portions. Place one portion along the center of each puff pastry sheet to form a long sausage shape. Be sure to leave some space on the edges.
  6. Roll the puff pastry over the turkey mixture, folding the sides in as you go to seal the roll. Place the seam side down on the baking sheet.
  7. Brush the top of each roll with the beaten egg to give them a golden finish when baked.
  8. Cut each roll into 4-5 pieces, depending on your desired size of sausage rolls.
  9. Bake for 20-25 minutes or until the puff pastry is golden and crispy, and the turkey mixture is cooked through (internal temperature of 165ยฐF or 74ยฐC).
  10. Remove from the oven and let the sausage rolls cool slightly before serving. Optionally garnish with fresh parsley.
  11. Serve with extra cranberry sauce or gravy for dipping, if desired.

Notes

  • For a lighter version, you can substitute ground turkey with chicken or a plant-based meat alternative.
  • If you prefer a more pronounced cranberry flavor, you can add a bit more cranberry sauce to the turkey mixture.
  • These rolls can be made ahead of time! Simply prepare and freeze them before baking, then bake from frozen for 25-30 minutes when ready to serve.
