These Turkey Cranberry Pinwheels are a perfect festive appetizer or lunch, combining savory turkey, tangy cranberry sauce, and a creamy spread all wrapped in a soft tortilla. These easy-to-make pinwheels are not only delicious but also a great way to use up leftover turkey from the holidays.
Ingredients

4 large flour tortillas

8 oz cream cheese, softened

2 cups cooked turkey, thinly sliced or shredded

Instructions

Prepare the Spread:
In a small bowl, mix together the softened cream cheese, mayonnaise, Dijon mustard, garlic powder, salt, and pepper until smooth and well combined. -
Assemble the Pinwheels:
Lay a tortilla flat on a clean surface. Spread a thin layer of the cream cheese mixture over the entire surface of the tortilla. Be sure to leave a small border around the edges. -
Add the Turkey and Cranberry Sauce:
On top of the cream cheese layer, evenly spread a thin layer of cranberry sauce. Then, add a layer of sliced or shredded turkey over the cranberry sauce. -
Add Greens (Optional):
If using greens, add a small handful of baby spinach or mixed greens on top of the turkey. -
Roll the Tortillas:
Carefully roll up the tortilla tightly, making sure to keep everything together as you roll. Once fully rolled, gently press to seal the edges. -
Slice the Pinwheels:
Using a sharp knife, slice the rolled tortillas into 1-inch wide pinwheels. Arrange them on a serving platter. -
Serve:
Serve immediately or refrigerate until ready to serve. These pinwheels can be stored in an airtight container in the refrigerator for up to 24 hours before serving.
