Description

These Turkey Cranberry Pinwheels are a perfect festive appetizer or lunch, combining savory turkey, tangy cranberry sauce, and a creamy spread all wrapped in a soft tortilla. These easy-to-make pinwheels are not only delicious but also a great way to use up leftover turkey from the holidays.

  • 4 large flour tortillas

  • 8 oz cream cheese, softened

  • 1/4 cup mayonnaise

  • 2 tbsp Dijon mustard (or yellow mustard)

  • 1/4 cup cranberry sauce (fresh or canned)

  • 2 cups cooked turkey, thinly sliced or shredded

  • 1/2 cup baby spinach or mixed greens (optional)

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste


Instructions

  1. Prepare the Spread:
    In a small bowl, mix together the softened cream cheese, mayonnaise, Dijon mustard, garlic powder, salt, and pepper until smooth and well combined.

  2. Assemble the Pinwheels:
    Lay a tortilla flat on a clean surface. Spread a thin layer of the cream cheese mixture over the entire surface of the tortilla. Be sure to leave a small border around the edges.

  3. Add the Turkey and Cranberry Sauce:
    On top of the cream cheese layer, evenly spread a thin layer of cranberry sauce. Then, add a layer of sliced or shredded turkey over the cranberry sauce.

  4. Add Greens (Optional):
    If using greens, add a small handful of baby spinach or mixed greens on top of the turkey.

  5. Roll the Tortillas:
    Carefully roll up the tortilla tightly, making sure to keep everything together as you roll. Once fully rolled, gently press to seal the edges.

  6. Slice the Pinwheels:
    Using a sharp knife, slice the rolled tortillas into 1-inch wide pinwheels. Arrange them on a serving platter.

  7. Serve:
    Serve immediately or refrigerate until ready to serve. These pinwheels can be stored in an airtight container in the refrigerator for up to 24 hours before serving.

Notes

  • For a healthier option, you can substitute whole wheat tortillas or low-carb tortillas.

  • You can also add a little bit of shredded cheese or a slice of avocado for extra flavor and creaminess.

  • If you don’t have cranberry sauce, you can use a homemade cranberry relish or even a fruit chutney as a substitute.
