Description

A creamy, comforting dish that combines tender chicken, flavorful vegetables, and orzo pasta in a rich sauce, finished with fresh spinach and Parmesan cheese. Perfect for a family dinner!


Ingredients

  • 500g diced chicken breast
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (400g) diced tomatoes
  • 1 tsp dried Italian herbs
  • 300g orzo pasta
  • 200ml chicken broth
  • 100ml heavy cream
  • Fresh spinach
  • Grated Parmesan cheese
  • Salt and pepper
  • Fresh basil

Instructions

  • Sauté chicken: Cook chicken in olive oil until browned. Remove and set aside.
  • Cook vegetables: Sauté onion and bell pepper in the same skillet. Add garlic.
  • Add sauce and orzo: Add tomatoes, Italian herbs, orzo, and chicken broth. Simmer for 10-12 minutes.
  • Stir in cream and spinach: Add cream and spinach. Cook for 2-3 minutes.
  • Combine and serve: Return chicken to skillet and mix everything together. Season with salt and pepper. Serve hot with Parmesan cheese and basil.

Notes

  • For added flavor, consider marinating the chicken in Italian herbs before cooking.
