- 500g diced chicken breast
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (400g) diced tomatoes
- 1 tsp dried Italian herbs
- 300g orzo pasta
- 200ml chicken broth
- 100ml heavy cream
- Fresh spinach
- Grated Parmesan cheese
- Salt and pepper
- Fresh basil
Instructions
- Sauté chicken: Cook chicken in olive oil until browned. Remove and set aside.
- Cook vegetables: Sauté onion and bell pepper in the same skillet. Add garlic.
- Add sauce and orzo: Add tomatoes, Italian herbs, orzo, and chicken broth. Simmer for 10-12 minutes.
- Stir in cream and spinach: Add cream and spinach. Cook for 2-3 minutes.
- Combine and serve: Return chicken to skillet and mix everything together. Season with salt and pepper. Serve hot with Parmesan cheese and basil.

- For added flavor, consider marinating the chicken in Italian herbs before cooking.
- You can substitute spinach with kale or other leafy greens.
