Description

Twice Baked Potato Casserole is a rich and comforting dish made with fluffy mashed potatoes, crispy bacon, melted cheese, and sour cream — all the flavors of twice baked potatoes in easy casserole form.


Ingredients

  • 5 large russet potatoes
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 2 cups shredded cheddar cheese, divided
  • 6 slices cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Scrub potatoes and bake them at 400°F (200°C) for 1 hour or until fork-tender. Let cool slightly, then peel and mash.
  3. In a large bowl, mix mashed potatoes with sour cream, cream cheese, milk, melted butter, 1 cup of shredded cheddar, and season with salt and pepper.
  4. Fold in half of the bacon and green onions.
  5. Transfer the mixture to the prepared baking dish and smooth the top.
  6. Sprinkle the remaining 1 cup cheddar and the rest of the bacon over the top.
  7. Bake for 25–30 minutes until hot and bubbly.
  8. Garnish with remaining green onions and serve warm.

Notes

  • Can be assembled a day ahead and baked before serving.
  • Swap cheddar for pepper jack for a spicier version.
  • Add cooked broccoli or sautéed mushrooms for extra texture and flavor.
