Description
Twice Baked Potato Casserole is a rich and comforting dish made with fluffy mashed potatoes, crispy bacon, melted cheese, and sour cream — all the flavors of twice baked potatoes in easy casserole form.

- 5 large russet potatoes
- 1 cup sour cream
- 4 oz cream cheese, softened
- 1/2 cup whole milk
- 1/2 cup unsalted butter, melted
- 2 cups shredded cheddar cheese, divided
- 6 slices cooked bacon, crumbled
- 1/4 cup chopped green onions
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Scrub potatoes and bake them at 400°F (200°C) for 1 hour or until fork-tender. Let cool slightly, then peel and mash.
- In a large bowl, mix mashed potatoes with sour cream, cream cheese, milk, melted butter, 1 cup of shredded cheddar, and season with salt and pepper.
- Fold in half of the bacon and green onions.
- Transfer the mixture to the prepared baking dish and smooth the top.
- Sprinkle the remaining 1 cup cheddar and the rest of the bacon over the top.
- Bake for 25–30 minutes until hot and bubbly.
- Garnish with remaining green onions and serve warm.
Notes
- Can be assembled a day ahead and baked before serving.
- Swap cheddar for pepper jack for a spicier version.
- Add cooked broccoli or sautéed mushrooms for extra texture and flavor.
