For the cookie base:

- 1/4 tsp Salt
- 1/2 cup Butter (softened)
- 1/4 cup Granulated sugar
- 1/4 cup Brown sugar (packed)

- 1 tsp Vanilla extract
For the caramel filling:
- 1/2 cup Sweetened condensed milk
- 1/4 cup Light brown sugar (packed)
- 2 tbsp Butter
- 1/2 tsp Vanilla extract
- 1/8 tsp Salt
For the chocolate topping:
- 1 cup Milk chocolate chips (or your favorite chocolate)
Instructions
- Preheat oven: Preheat the oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
- Make the cookie dough: In a medium bowl, whisk together the flour, baking soda, and salt. In another bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
- Form the cookie cups: Scoop a small amount of dough (about 1 tbsp) into each muffin tin cup, pressing it down to form a flat base. Use your fingers or the back of a spoon to create a small indentation in the center of each cookie cup.
- Bake the cookie cups: Bake for 8-10 minutes, or until the edges are golden brown. Remove from the oven and let them cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
- Prepare the caramel filling: In a small saucepan, combine the sweetened condensed milk, brown sugar, butter, and salt. Cook over medium heat, stirring constantly until the mixture thickens and comes to a simmer (about 5-7 minutes). Once thickened, remove from heat and stir in the vanilla extract.
- Assemble the Twix cups: Once the cookie cups are completely cooled, spoon about 1 teaspoon of caramel into each cup, filling the indentation.
- Add the chocolate topping: Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each interval until fully melted. Spoon a small amount of melted chocolate over the caramel layer, smoothing it out with a spoon.
- Chill and set: Place the filled cookie cups in the refrigerator for about 30 minutes, or until the chocolate hardens.
- Serve: Once set, serve the Twix cookie cups chilled or at room temperature and enjoy!
Notes
- You can use dark chocolate or semi-sweet chocolate if you prefer a less sweet topping.
- For a thicker caramel layer, increase the caramel ingredients proportionally.
