  • 4 pieces naan bread (store-bought or homemade)
  • 1 lb chicken breast, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup cucumber, diced
  • 1 red bell pepper, thinly sliced
  • ½ red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1 cup tzatziki sauce (store-bought or homemade)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken:
    Preheat your oven to 400°F (200°C). Season the chicken breasts with olive oil, garlic powder, paprika, cumin, oregano, salt, and pepper. Heat a skillet over medium heat and cook the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the heat and let it rest for a few minutes, then slice it into thin strips.
  2. Prepare the Veggies:
    While the chicken cooks, prepare the veggies by dicing the cucumber, thinly slicing the red bell pepper and red onion, and halving the cherry tomatoes.
  3. Assemble the Pizzas:
    Place the naan bread on a baking sheet or pizza stone. Spread a generous amount of tzatziki sauce on each naan, leaving a small border around the edges.
  4. Add Toppings:
    Evenly distribute the sliced chicken, cucumber, bell pepper, onion, and cherry tomatoes on top of the tzatziki sauce. Sprinkle shredded mozzarella cheese over the toppings.
  5. Bake the Naan Pizzas:
    Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly, and the naan is crispy around the edges.
  6. Garnish and Serve:
    Once out of the oven, garnish with chopped fresh parsley and an extra drizzle of tzatziki sauce, if desired. Slice and serve immediately.
