For the Meatball Subs:

  • 3 hoagie rolls
  • 1215 beef meatballs (see below for the homemade meatball recipe)
  • 11.5 cups marinara sauce (homemade or store-bought)
  • 3 tbsp freshly grated Parmesan cheese
  • 11.5 cups thick shredded mozzarella cheese
  • 2 tsp dried oregano

For the Homemade Meatballs:

  • 1 lb ground beef (85% lean/15% fat preferred)
  • 1 egg
  • 1 slice whole wheat bread (soaked in milk and squeezed)
  • 1/4 cup minced yellow onion
  • 1/4 cup freshly grated Parmesan cheese
  • 2 garlic cloves, pressed
  • 1 tbsp fresh minced basil
  • 1/2 tbsp fresh minced parsley
  • 1/21 tsp kosher coarse or sea salt (to taste)
  • 1/81/4 tsp black pepper (to taste)

Instructions

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C).
  • Make the Meatballs:
    In a large mixing bowl, combine ground beef, egg, minced onion, Parmesan cheese, pressed garlic, basil, parsley, salt, and pepper.
    Squeeze the soaked bread slice to remove excess milk, break it into small pieces, and mix it into the beef mixture.
    Shape the mixture into 1-inch meatballs and place them on a greased or parchment-lined baking sheet.
    Bake for 20–22 minutes, until cooked through and lightly browned.
  • Assemble the Subs:
    Slice the hoagie rolls lengthwise, being careful not to cut all the way through.
    Spread marinara sauce inside each roll. Add 4–5 meatballs to each roll, topping with additional marinara sauce.
    Sprinkle shredded mozzarella and Parmesan cheese over the meatballs and finish with a pinch of dried oregano.
  • Bake the Subs:
    Place the assembled subs on a baking tray and bake for 15–17 minutes, or until the cheese is melted and bubbly.
  • Serve and Enjoy:
    Remove from the oven and serve immediately. Pair with a crisp salad or fries for a complete meal.

  • Bread Tip: For a toasty roll, lightly brush the inside of the hoagie rolls with olive oil and broil for 2–3 minutes before assembling.
