- 1 cup cooked breakfast sausage, crumbled
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 2 tbsp olive oil or butter
- Sour cream and salsa, for serving (optional)
Instructions
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Heat olive oil or butter in a skillet over medium heat. Sautรฉ bell peppers and onions until softened, about 3-4 minutes.
- Add the egg mixture and cook, stirring gently, until eggs are scrambled and just set.
- Remove from heat and stir in cooked sausage, diced tomatoes, cilantro, and shredded cheese.
- Warm tortillas in a dry skillet or microwave until pliable.
- Divide the egg mixture evenly among the tortillas. Roll up burritos by folding in the sides and rolling tightly.
- Optional: For crispy burritos, heat a skillet and cook each burrito seam side down for 2-3 minutes until golden and sealed.
- Serve warm with sour cream and salsa if desired.
