Ingredients

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp olive oil or butter
  • Sour cream and salsa, for serving (optional)


Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. Heat olive oil or butter in a skillet over medium heat. Sautรฉ bell peppers and onions until softened, about 3-4 minutes.
  3. Add the egg mixture and cook, stirring gently, until eggs are scrambled and just set.
  4. Remove from heat and stir in cooked sausage, diced tomatoes, cilantro, and shredded cheese.
  5. Warm tortillas in a dry skillet or microwave until pliable.
  6. Divide the egg mixture evenly among the tortillas. Roll up burritos by folding in the sides and rolling tightly.
