  • 4 slices of thick bread (sourdough or your choice)
  • 1/2 lb shrimp, peeled and deveined
  • 3 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  • Cook the Shrimp: Heat a pan over medium-high heat. Season the shrimp with salt and pepper. Add the shrimp to the pan along with minced garlic and sauté in butter for 3-4 minutes, or until the shrimp turn pink and are fully cooked. Set aside.
  • Prepare the Bread: Brush each slice of bread with melted butter and sprinkle with minced garlic.
  • Assemble the Sandwiches: On two slices of bread, layer shredded mozzarella cheese and grated Parmesan cheese. Add the sautéed shrimp on top of the cheese.
  • Close the Sandwiches: Place the remaining slices of bread on top to close the sandwiches.
  • Grill the Sandwiches: In the same pan used for the shrimp, grill the sandwiches over medium heat, pressing down gently with a spatula until golden brown and crispy on both sides (about 4-5 minutes per side).
